PS: Quick and Easy Mac and Cheese

Makes: 4 - 6 servings

Cook time: 5 - 10 minutes
Ingredients
1 pkg. macaroni, cooked according to package directions
Sauce
¼ cup raw cashews
3 cups soy milk
8 T nutritional yeast
3 T oat flour
2 T cornstarch
1 t paprika
1 t powdered onion
1 t Sriracha sauce
½ t salt
Directions
Place cashews in blender. Blend to a grainy powdered texture. Add remaining ingredients and blend until smooth.
Cook and stir over medium heat for about 5 minutes, until thickened.
Combine noodles and sauce and serve immediately.
Tip: For a lower fat version, substitute 1 c of water for 1 c of soy milk.
