Ingredients
- 1 cup whole wheat flour
- 1 cup oat flour
- 1 tsp. baking powder
- ½ tsp. baking soda
- 1 tsp. ground cinnamon
- ½ tsp. ground nutmeg
- ⅓ cup maple syrup
- ½ cup applesauce
- 2 tsp. vanilla extract
- 1 cup soy milk
- 1 12-oz. pkg. frozen blueberries
Directions
- Preheat oven to 400 degrees.
- Mix first six ingredients in a large bowl.
- Place remaining ingredients in the center and mix gently.
- Spoon batter into a muffin pan lined with baking cups.
- Bake 25 minutes or until a toothpick inserted in the middle comes out clean.
