PS: PAD THAI

Makes: 4 - 6 servings
Prep time: 20 minutes
Cook time: 10 minutes
Ingredients
- 1 pkg. brown rice noodles
- 2 T soy sauce
- 1 T peanut butter
- 1 T sweet red chili sauce
- ¼ tsp. garlic powder
- ¼ tsp. ginger
- ¼ tsp. hot pepper sauce
- 2 T water
- Broccoli, carrots, onions, mushrooms, or whatever veggies you have on hand (chopped)
Directions
- Water-saute veggies to desired tenderness. Be sure to add water as needed to prevent the pan from browning.
- In a small bowl, mix the soy sauce, peanut butter, red chili sauce, garlic powder, ginger, hot pepper sauce, and water. Heat in a saucepan or in the microwave.
- Cook brown rice noodles according to package directions. Drain and rinse.
- Place noodles on plate.
- Top with veggies.
- Pour sauce over top. Voila!
