PP SuperFast SuperFood Soup

Makes: 4 - 6 servings

Cook time: 15 minutes
INGREDIENTS
- 1 c onion, diced
- 1 c carrots, sliced
- 1 8-oz jar roasted red peppers, diced
- 2 cans chickpeas, rinsed and drained
- 1 T cumin
- 2 T tomato paste (or ketchup)
- ½ (16 oz.) pkg frozen cauliflower florets
- 2 c vegetable broth
- 1 24 oz jar diced tomatoes
- 1 large handful of baby spinach
DIRECTIONS
- Saute sliced carrots and diced onion in a small amount of water until tender, about 8 minutes. Add more water if pan begins to brown.
- All remaining ingredients into a saucepan with carrots and onion. Simmer until ready to serv.
