PP Chocolate Dreams Holiday Pudding
Chef: Debra Walter, ChefVeggie.com
Makes: 4 Servings
Prep Time: 5 minutes
Chill Time: 1 hour
Total Time: 1 hour 5 minutes
INGREDIENTS
4-6 Medjool dates, use 6 if you like your desserts sweeter
1 cup oat milk (or your favorite plant milk)
4 T Dutch process cocoa powder or your favorite Cacao
1 t vanilla
3 T chia seeds
4-6 T pumpkin puree (6 will give you a more pronounced pumpkin flavor)
½ t cinnamon
¼ t nutmeg
Festive fruit toppings
DIRECTIONS
Pit the dates, if they are not already pitted. Always a good idea to check. If they are hard, soften with a little warm water. Drain water. Only dates go in the blender.
Place the ingredients in a high-speed blender. I put milk first, then the rest.
Blend until the pudding is as smooth as you like, 1-4 minutes. I like blending 4 minutes for smoothest consistency.
Chill pudding in your refrigerator.
Dress up your holiday indulgence with your favorite colorful festive fruits such as pomegranates and berries, etc.
