PS/PP Oil Free Apple Slaw

INGREDIENTS
1 head of cabbage, roughly 15-18 c, sliced thinly in strips
4 c shredded carrots (use a food processor for ease)
5 c thinly sliced apples, about 5 apples
1 c apple cider vinegar, (preferably raw/fermented)
2 c fruit juice sweetened (not with sugar) craisins Craisins or dried cherries
2 t kosher or sea salt
1 ½ - 2 t black pepper
1 c minced parsley
2 c pumpkin seeds (sunflower seeds or other nuts work, too), eliminate for Plant Perfect
DIRECTIONS
Place all ingredients except parsley and seed/nuts into a bowl.
Massage the ingredients by running them for a little while until well mixed and slightly softened.
Add parsley.
When ready to serve add in the seed (do this right before serving so that they keep their crunch).
TIPS
Serve alongside your favorite dishes!
