PP Homemade Guilt-Free Waffles

INGREDIENTS

  • 2 ripe bananas

  • 2½ c – 3 c whole grain or Gluten-Free oats

  • ¼ c oat milk (soy and almond work great too)

  • 1 t cinnamon

  • ½ t vanilla (sugar-free alcohol-free if possible)

  • 2 T ground flax seed plus 6 T warm water

  • 1 ½ c fresh fruit, chopped. Raspberries, mango, strawberries, and blueberries make for a delightful treat but most fruit will work great.

DIRECTIONS

  1. Preheat waffle iron.

  2. Combine flax and water, set aside to thicken.

  3. With a fork, smash the ripe banana.

  4. Stir in milk, then add oats, cinnamon and vanilla.

  5. Stir in flax and water mixture which will act like an egg to bind ingredients better.

  6. Spoon batter onto hot waffle iron, filling all the nooks and crannies. Let run for the full cycle and then another few minutes.

  7. Use a rubber spatula to peel the waffles off the iron.

  8. Top with fresh fruit and a light sprinkle of cinnamon. Enjoy!
