PS No-Bake Fudge Brownies

INGREDIENTS

  • 1 c oats, ground

  • 12 Medjool dates pitted

  • 2 c black beans, rinsed, but save bean water

  • ½ c sauerkraut rinsed and pressed

  • ½ c shredded coconut

  • ½ c carob powder

  • 1 T vanilla

  • 4-6 T aquafaba (from black beans)

  • ½ c walnuts, chopped (optional)

DIRECTIONS

  1. Place all the ingredients except the walnuts in a food processor. Process to combine ingredients until smooth, scraping the sides as needed.

  2. Add walnuts and pulse a few times.

  3. Spread in a 9’ x 13’ glass baking dish.

  4. Refrigerate for at least 30 minutes before serving.
