PP Single-Serving Beans in a Hurry

Prep time: 5 minutes
Cook time: about 10 - 15 minutes (or microwave 1-2 minutes)
INGREDIENTS
1 15-oz can pinto beans
¼ c ketchup or tomato sauce
2 T nutritional yeast
1 t garlic powder
½ t oregano
½ t cumin
black pepper, to taste
DIRECTIONS
Rinse and drain beans. Place in a bowl. Preheat oven to 350 degrees.
Add ketchup (or tomato sauce), nutritional yeast, garlic powder, oregano, cumin, black pepper. Stir until combined.
Pour bean mixture into an oven-proof dish. Bake for 10-15 minutes until heated through.
Serve as is or pour over brown rice or chopped lettuce.
TIPS
If you are in a super hurry, microwave dish for 1 minute or until heated through.
