PS Cardamom Cookies with Cranberries

INGREDIENTS

Dry

  • ½ c rolled oats

  • 3 T + 1 t oat flour

  • 3 T + 1 t mesquite flour (well worth finding)

  • 6 T coconut flour

  • 1 t cinnamon

  • 1/8 t cardamom

  • ¼ t Himalayan salt

Wet

  • 3 juicy dates

  • 2 T date sugar

  • ¾ c oat milk

  • 1/3 c additive free nut butter

Add later

  • ½ c fresh or frozen cranberries

DIRECTIONS

  1. In a medium bowl, combine all the dry ingredients

  2. Then, in a mixing bowl or regular blender, process the wet ingredients until well incorporated.

  3. Next, pour the wet mixture over the dry ingredients and mix until you have a homogeneous batter. Cover the bowl with plastic wrap or a lid and refrigerate for at least half an hour. If you use fresh cranberries, fold them in before cooling the batter.

  4. Heat oven to 355 degrees.

  5. After chilling the dough, mix in frozen cranberries.

  6. Now, start shaping the dough into about 1 ½ oz cookies – form a cookie ball between your palms and then press it down a little. Place the cookies on baking sheet lined with parchment paper. I use kitchen scales to get even cookies. Finally, press cookies down with a dessert fork.

  7. Bake for 16 min until golden brown. Place the lightly browned cookies onto a rack to cool completely.

TIPS

  1. Store in the refrigerator in a sealed container for up to 3 days. You can also freeze the cookies and heat in microwave, or a regular oven for crispier cookies whenever needed.

  2. If you don’t have oat flour, you can grind your own in a high-speed blender using rolled oats, the same amount
