PS Sweet Potato Streusel Bars

Makes: 40-44 (1 ½”) bars
Prep Time: 20 min
Cook Time: Sweet Potatoes (10 min in microwave of 50 min in a 400 degree oven) & 15 min
Total Time: 45 min or 1 hr 25 min
INGREDIENTS
1 c sweet potatoes
2 ripe bananas
½ c unsweetened applesauce
½ c pitted dates
½ c water
2 c rolled oats
1 1 /2 t cinnamon
2 t baking powder
1 t pure vanilla extract
Streusel
½ c dates
¼ c rolled oats
¼ c raw pecans
¼ t cinnamon
Pinch of salt
DIRECTIONS
Scrub and pierce sweet potatoes, and microwave until tender. When cool enough to handle, remove skins.
Preheat oven to 350 degrees
Into a bowl of a large food processor, add Sweet Potato Bars ingredients (sweet potatoes through vanilla). Process for a couple of minutes, until the mixture is very well combined.
Remove bowl and blade from the base. Divide batter evenly, filling 40-44 sections of a silicone brownie bites pan or two. (my pan holds 24 bars, so I used 2 pans.)
Place the bowl and bade back on the base of the food processor. Add the Streusel ingredients and pulse several times to create the topping. Remove bowl and blade from the base.
Carefully top each bar with about ½ t of the streusel mixture. Pat in place very lightly.
Bake for approximately 15 min, or until tops are golden and almost firm to the touch. Remove from the oven and place on a cooling rack.
