PP Southwestern Potato Hash

INGREDIENTS
4 Yukon Gold potatoes (3 c)
1 onion
1 red bell pepper
1 can whole green chiles
8 oz Baby Portabellas
2 t minced garlic
½ t smoked paprika
½ t chipotle chili powder
¼ t ground cumin
¼ t ground pepper
1-2 handfuls chopped kale
Salt to taste
DIRECTIONS
Dice potatoes and add to a pot cold water, enough to cover.
Bring to a boil and cook for 5 min. Rinse, drain and set aside.
In a large nonstick skillet sauté a diced onion in a splash of water or vegetable broth until softened.
Stir in chopped red bell pepper and sauté until softened.
Add green chiles, garlic, mushrooms, and seasoning. Stir to combine.
When mushrooms have cooked down, stir in potatoes.
Add kale and simmer until it is wilted.
Add salt and pepper as desired.
Serve with your favorite condiment.
