PP Oatmeal Pancakes

INGREDIENTS
7 oz rolled oats
24.7 oz filtered water
Himalayan salt to taste
2 t cinnamon
1 T psyllium husks 7 T coconut flour
1 T apple cider vinegar
DIRECTIONS
Start by combining rolled oats and filtered water in a bigger clean blow. Cover the bowl with a clean kitchen towel or a lid and soak overnight or for 6-8 hours. You can leave the bowl on your kitchen counter.
Next, add salt and cinnamon. Using an immersion blender, process until you have a smooth batter. Now, throw in psyllium husks as well as the coconut flour and blend again. Finally, stir in the apple cider vinegar and let the pancake batter sit for a least 10 min. The longer it sits (even for a few hours in the fridge), the thicker the batter – perfect for those chubby pancakes you see on the photos.
For frying the pancakes, use a good quality nonstick pan. (Esselstyn says you can spray with cooking spray, but swipe with a paper towel and remove all excess spray.) Let the pan heat to medium heat.
Now, if you make small pancakes, add on heaped T of batter (as much as you can fit) in your pancake pan. Should you make bigger pancakes, put 2 heaping T of batter onto the pan and even it out with a spoon. These cakes take longer to cook than most. I flip it around when it is dry on the top and bubbled and check the color of the bottom side. I cook the pancakes for about 6 min on the first side, and 3 min for the second. Make sure the pancakes cook through.
