PP Corn Lentil Soup

INGREDIENTS

  • 1 c red lentils

  • ¼ c brown rice

  • 1 can diced tomatoes

  • 1 can corn

  • 1 red bell pepper, diced

  • 5 c vegetable broth or water (If using water add 2 vegan vegetable bouillon cubes

  • 1 t paprika

DIRECTIONS

  1. Cut the bell pepper into small pieces. Add all ingredients to a pot, mix well, bring to a boil.

  2. Reduce to a simmer and cook until the rice is done.
