PP Zesty Mango Quinoa Salad

INGREDIENTS
1 c dry quinoa (any color)
1 ripe mango, peeled and diced
1 ¾ c chickpeas, canned, low sodium
¼ c fresh cilantro
¼ c lime juice
1 t garlic powder
1 t Italian Seasoning
DIRECTIONS
Rinse quinoa in a fine-mesh colander. Boil 2 c of water in a medium size saucepan and add quinoa. Cover and simmer on low for 15 min or until liquid is absorbed.
Whisk together the lime juice, garlic powder, and Italian seasoning in a small bowl.
In a large mixing bowl, combine cooked quinoa, mango, chickpeas, and cilantro. Top with the lime juice dressing and mix until well coated.
Serving as is or over a bed of greens.
TIPS
If fresh mango is not available, you can use frozen mango, thawed. Use about 1 c per 1 ripe mango. Chop the thawed mango into smaller pieces.
