PP Zesty Mango Quinoa Salad

INGREDIENTS

  • 1 c dry quinoa (any color)

  • 1 ripe mango, peeled and diced

  • 1 ¾ c chickpeas, canned, low sodium

  • ¼ c fresh cilantro

  • ¼ c lime juice

  • 1 t garlic powder

  • 1 t Italian Seasoning

DIRECTIONS

  1. Rinse quinoa in a fine-mesh colander. Boil 2 c of water in a medium size saucepan and add quinoa. Cover and simmer on low for 15 min or until liquid is absorbed.

  2. Whisk together the lime juice, garlic powder, and Italian seasoning in a small bowl.

  3. In a large mixing bowl, combine cooked quinoa, mango, chickpeas, and cilantro. Top with the lime juice dressing and mix until well coated.

  4. Serving as is or over a bed of greens.

TIPS

  1. If fresh mango is not available, you can use frozen mango, thawed. Use about 1 c per 1 ripe mango. Chop the thawed mango into smaller pieces.
