PP Artichoke Cakes

Makes: 8 lg patties or 24 bite-sized morsels

INGREDIENTS
1 can heart of palm, packed in water, rinsed (to remove salt) and drained
1 can artichoke hearts packed in water, drain, and gently squeeze excess water out
½ can garbanzo (chickpeas) beans, drained and rinsed
¾ c Panko breadcrumbs, you may use gluten free if preferred
1 t garlic powder
1 t dried dill or 1 T fresh dill (parsley or cilantro are also a good selection for this recipe)
½ - 1 t kosher salt
½ t lemon pepper blend ~OR~ ½ t grated lemon zest and ½ t pepper
½ - 1t Cholula (hot sauce) or tabasco, depending on your spice preference
DIRECTIONS
Preheat oven to 400 degrees F.
Line cookie sheet with parchment or silicone baking sheet.
Blend all ingredients in a food processor or mini chopper so that it remains full of small chunky pieces, do NOT over blend.
Taste: add salt, pepper, and hot sauce to adjust to your liking.
Scoop and gently press to flatten topside onto Silpat or parchment paper.
Bake for 8 min, then gently flip, and cook an addition 5-8 min until golden brown. Remove from oven and let them settle for 5 min.
Serve with a balsamic glaze or cocktail sauce. Excellent meal over grilled vegetables and rice or on top of a salad. Also makes a great appetizer, just make bite-sized patties, and decrease the cooking time.
