PP Gray Table Classic Crushed Lentil Soup

INGREDIENTS
1 onion, diced
1 carrot, peeled and cut into rounds
1 russet potato, peeled and chopped
1 t cinnamon
1 t cumin
1 t salt
1 c red lentils
½ c short grain brown rice
6-8 c water
Juice of 1 lemon
Black pepper to taste
DIRECTIONS
Water sauté the onion in a large soup pot or Dutch oven for 5ish min or until soft.
Add the salt, cinnamon and cumin.
Add the carrot and potato and sauté for an additional 2 min.
Add the lentils, brown rice and 6 c of water (start with 6 c of water and add more as needed to reach desired consistency at the end.)
Bring to a boil. Once boiling, turn down to simmer, cover and let everything get soft (about 40 min).
Using a hand blender, partially puree soup until “crushed lentil” consistency is reached.
Add the juice of one lemon and black pepper to taste.
