PP Hash Brown Pizza Cups

INGREDIENTS
Potato Cups
20 oz bag shredded hash browns (w/out oil)
1 t Italian Seasoning
¼ t salt
¼ t pepper
1 flax egg (2 T ground flax meal + 3 T water)
Filling
1 c mushrooms, finely diced
½ c onion, finely diced
¼ c red bell pepper, finely diced
¼ c *Ultimate fat-free pizza sauce (See Brand New Vegan)
Suggested Garnish
*Vegan Cheese Sauce (see Brand New Vegan under Best of BNV of 2019)
Jalapeños
Panko bread crumbs
Cilantro
Fresh Italian Parsley
Diced green onions
Salsa
Additional pizza sauce
Red pepper flakes
DIRECTIONS
Preheat oven to 475 F.
Prepare *Ultimate Fat-Free Pizza Sauce.
In a lg bowl, combine potatoes, seasoning and flax egg-mix well.
Press 1/3 c potato mixture into a muffin tin to form a cup.
Bake potato cups for 15 min.
Meanwhile, finely dice the mushrooms, onion, and bell pepper.
Add veggies to a small bowl and stir in ¼ c pizza sauce.
When potatoes are done, remove the pan and carefully spoon 1-2 t of veggie mixture into each cup.
Continue baking at 475 F for an additional 10 min.
Once again, remove pans and this time, set oven to broil.
Garnish with cheese sauce, panko, green onions, plus whatever topping you want.
Broil 1-2 min.
