PP Quick Sweet Potato Soup

INGREDIENTS

  • 2 very lg sweet potatoes, cubed

  • 2 celery stalks, with leaves, sliced

  • 4 c thinly sliced green cabbage

  • 6 c vegetable broth, plus more as needed

  • ½ c parsley, chopped

DIRECTIONS

  1. Put the sweet potato cubes, celery, cabbage, and vegetable broth in a medium-sized soup pot. Add more broth if needed to cover the vegetables.

  2. Cover and bring to a boil over medium heat. Once boiling, decrease the heat to medium-low and cook for 20 min.

  3. Add the parsley and cook for 10-15 min more, or until the vegetables are soft.

  4. Serve hot.
