PS Quinoa & Hemp Nuggets

Total Time: 1 hr 10 min (Time does not include making the Veg Cheese.)
INGREDIENTS
½ c cooked cauliflower
½ c cooked carrots
½ c Veg Cheese
1 T Nutritional Yeast
1 clove garlic
1 t salt (optional)
1 c cooked quinoa
3 T breadcrumbs
1 t turmeric
¼ c hemp hearts/seeds
DIRECTIONS
Preheat oven to 400 F
Steam or boil your cauliflower and carrots until just soft, about 15 min. Once the vegetables are cooking, cook Quinoa following package directions (use water or vegetable broth) for about 20 minutes until all the liquid absorbed and fluff with a fork.
In a food processor combine the cooked cauliflower, cooked carrots, veg-cheese, nutritional yeast, garlic, and salt.
Place into a large bowl and hand mix with the cooked quinoa.
In a separate bowl, mix the breadcrumbs, turmeric, and Hemp hearts/seeds.
With your wet mixture roll 1 T at a time into balls. Coat them in the crumb mixture and flatten them into coins.
I put them into a silicone mini muffin pan. They work perfectly. Or you can lay them out in an even layer on a silicone-lined baking sheet.
Bake for 23-25 min.
