PP or PS Strawberry Spinach Salad

INGREDIENTS

  • 2 c baby spinach

  • 1 c chopped or sliced strawberries

  • ¼ c chopped red onions

  • ¼ c sliced almonds or walnuts, Plant-Strong ONLY

  • 2 T balsamic vinegar, fat-free balsamic dressing, or a drizzle of balsamic glaze

Optional

  • ½ c mushrooms, sliced and sauteed

  • ½ c white beans, drained and rinsed

DIRECTIONS

  1. Thoroughly wash and drain spinach and strawberries.

  2. Slice or chop strawberries.

  3. Place spinach in a bowl and add toppings. Top with balsamic vinegar, dressing, or balsamic glaze.

TIPS

  1. Add sauteed mushrooms and white beans to make it a complete Plant-Perfect, Dr. Fuhrman G-BOMB salad!
