PP Festive Latkes

INGREDIENTS
• 2 T ground flaxseed meal
• 6 T water
• 6 medium to large Russet or Idaho potatoes
• 2 large yellow onions
• ½ c flour (oat, garbanzo bean, or white whole wheat)
• 3 green onions chopped (by hand)
• Salt and pepper to taste
• Applesauce for serving
• *Plant-based sour cream for serving – PS only
DIRECTIONS
1. Preheat oven to 425 degrees F and line a couple of baking sheets with parchment paper.
2. Prepare flax eggs by combining 2 T of ground flaxseed mean and 6 T of water. Mix and chill
in the refrigerator for at least 10 min.
3. Peel the potatoes and grate in a food processor using the grater attachment.
4. Rinse the grated potatoes well in a colander, then spin dry in a salad spinner.
5. Spin well until no more liquid comes out. Transfer to a huge bowl.
6. Grate the onion in the food processor using the grater attachment. Do NOT rinse but spin the liquid out using the salad spinner. Transfer to the bowl with potatoes.
7. Chop the green onion by hand.
8. Add green onion, flour, and the refrigerated flax eggs to the bowl with the potatoes and
onions, mix everything well.
9. Use an ice cream scoop to scoop out mixture. Level it. Place mixture onto the baking sheet lined with parchment paper and pat into a flat circle. Repeat with the entire mixture.
10. Bake at 425 degrees F for about 30 min or until golden brown.
11. Serve with applesauce and/or your favorite plant-based sour cream (PS only). Salt and

TIP
1. If you use a plant-based sour cream, you can chop up one T of finely chopped radish, 1 T
finely chopped cucumber, and 1 T of finely chopped green onion, and add it to a ½ c of sour cream, mix well. Serve over latkes.
