PP Spicy Chipotle Mac 'n Cheese

INGREDIENTS

Cheese Sauce

  • 1 pkg organic silken tofu

  • ½ c nutritional yeast

  • Juice of 1 lemon

  • ¼ c vegetable broth

  • 1 T garlic powder

  • ½ T smoked ground paprika

  • ½ T onion powder

  • 2-3 T chipotle pepper adobo sauce (1 use Frontera brand found at Whole Foods)

  • Optional salt to taste

Pasta

  • 8-10 oz whole-grain pasta

  • Optional: ½ bag frozen broccoli

  • Optional: ¼ c frozen peas

DIRECTIONS

  1. Cook pasta according to directions. If you have a 12 oz box of pasta do not use it all. You want a good sauce to pasta ratio.

  2. While pasta is cooking, makes the sauce in a high-speed blender. Simply add all ingredients and blend. Start with only 2 T of chipotle pepper adobo sauce and taste it. I like 3 T but I like spicy food. If you like more smoky than spicy you can add more smoked ground paprika and use less chipotle sauce. You will likely need to add salt after if you do this.

  3. When pasta is one minute away from being done, add frozen vegetables to the boiling water if you are going to use them.

  4. Drain pasta and vegetables – DO NOT RINSE.

  5. Immediately return the pasta to the pot and add the sauce. Mix well. Add salt to taste if wanted.
