Culinary Class with Chef Cathy Katin-Grazzini

Join Cathy Katin-Grazzini, plant-based chef and cookbook author of Love the Foods that Love You Back (Rizzoli, 2022), for a culinary demo. Cathy will make creamy tomato curry, and unlike traditional Indian creamy curries, this one has no inflammatory butter, ghee, oil, or nuts. Its luscious texture comes from thick soy yogurt. Seasoned with freshly roasted garam masala, it is alive with sweet spices and mild Kashmiri chilies. Tender soft tofu supplants paneer. Mauve Japanese eggplant and Asian spinach melt into the sauce, round out the flavors, and up its nutritional density.  There is so much to delight the senses, you’ll never miss the cholesterol, saturated fat, and calories that are missing.
