PP Powermint Balls

Makes: 18-20 balls
INGREDIENTS
1 ½ c black beans, (reserve liquid) drained and rinsed
2 c rolled oats
5 pitted Medjool dates (1/2 c)
2-4 T liquid from beans
2 T carob powder
2 drops peppermint
DIRECTIONS
Place all the ingredients in a food processor.
Process 2-3 min low speed, scraping sides occasionally.
Process until the mixture begins to form a ball on the blade, adding liquid from the beans. 1 t at a time as necessary.
Use a T scoop to form small balls with your hand and flatten if desired to look more like peppermint patties.
Store in the refrigerator.
