PP Powermint Balls

Makes: 18-20 balls

INGREDIENTS

  • 1 ½ c black beans, (reserve liquid) drained and rinsed

  • 2 c rolled oats

  • 5 pitted Medjool dates (1/2 c)

  • 2-4 T liquid from beans

  • 2 T carob powder

  • 2 drops peppermint

DIRECTIONS

  1. Place all the ingredients in a food processor.

  2. Process 2-3 min low speed, scraping sides occasionally.

  3. Process until the mixture begins to form a ball on the blade, adding liquid from the beans. 1 t at a time as necessary.

  4. Use a T scoop to form small balls with your hand and flatten if desired to look more like peppermint patties.

  5. Store in the refrigerator.
