PS Monster Mash

INGREDIENTS

  • 1 c, edamame, shelled and cooked

  • 1 can 15.5 oz cannellini beans, drained and rinsed

  • ½ c spinach, fresh

  • 1 T garlic, minced

  • 2 T nutritional yeast

  • 2 T lemon juice

  • 1 ripe avocado

  • 1/3 c chives, fresh, minced

  • ¼ t cayenne pepper

  • Salt and pepper to taste

1-2 Kalamata or Black Olives

DIRECTIONS

  1. Combine everything through the avocado into a food processor and process until smooth. Pulse in the chives and seasonings until combined.

  1. Cut an olive in half for the body and cut the other half into legs. Large olives work best, but I used Kalamata as I like those best.
