PS or PP Healthy Coffee Cake

Cook Time: 30 min for date paste version, 50 min for maple syrup version
Total Time: 50 min for date paste version, 1 hr 10 min
INGREDIENTS
Wet
1 c unsweetened non-dairy milk + 2 t apple cider vinegar (Mix & set aside)
1 T ground flax meal + 3T water (mix & set aside)
½ c apple sauce
½ c date paste, or maple syrup
Dry
2 c oat flour
1 t baking powder
1 t baking soda
1 T all spice
Topping
¾ c rolled oats
¼ c date paste, or maple syrup
1/3 c oat flour
2 T almond butter (optional, recipe becomes PS if using)
DIRECTIONS
Preheat your oven to 350 degrees F.
Mix the wet ingredients together.
Mix the dry ingredients together.
Mix topping ingredients together.
Slowly combine the dry ingredients into the wet.
Add the coffee cake batter into your baking dish. (Use parchment paper if you do not have silicone.)
Sprinkle the mixed toppings all over the coffee cake batter. If PS, add almond butter, too)
Pat the toppings gently into the cake batter.
Bake for 30 min until golden brown.
Let cake cool completely before removing it from the pan.
