PP Easy Chickpea Nuggets

INGREDIENTS

Chickpea Nuggets

  • 1-15.5 oz can chickpeas (save the liquid from the can and rinse beans)

  • 6 T chickpea liquid (aquafaba)

  • 1 c oat flour (blend rolled oats in a high-speed blender to make flour)

  • 1 T Italian/Pizza seasoning

  • 1 T nutritional yeast

  • ½ t turmeric powder

  • 1 t white miso

  • Pinch black pepper

Breading

  • ¼ c nondairy milk

  • ½ c whole wheat breadcrumbs

  • 2 t Italian/pizza seasoning

DIRECTIONS

  1. Add all ingredients for the chickpea nuggets into a food processor and mix until everything is well combined. (DO NOT add breading ingredients!)

  2. Form nugget shapes with the mixture, 12-14 nuggets.

  3. Place ¼ c of nondairy unsweetened milk in a bowl.

  4. Mix whole wheat breadcrumbs and 2 t Italian/pizza seasoning together.

  5. Create a dredge with each chickpea nugget-goes into nondairy milk and then into breadcrumb mixture.

  6. Bake at 350 degrees for 40 min. Flip the nuggets at the halfway point.
