PP Easy 'No Chicken Noodle Soup'

INGREDIENTS
1 c carrots, chopped
1 c celery, chopped
1 c, red onion, diced
2 garlic cloves, minced
4 c vegetable broth
2 bay leaves
1 t dried thyme
1 t dried oregano
1 t dried parsley
1 T lemon juice
1 t miso
Black pepper to taste
1 pkg whole wheat pasta (cooked separately)
1 c soy curls shredded, or 1 c jackfruit shredded
DIRECTIONS
Cook pasta according to the pkg. directions.
Sauté onions, garlic, carrots, and celery in 1 c of vegetable broth in a large soup pot - bring to a simmer and cook until onions are translucent.
Add in the remainder of vegetable broth, bay leaves, seasonings and bring to a simmer, or until vegetables are fork tender. (around 10-15 min)
After soy curls are rehydrated and shredded OR shredded jackfruit is ready and add into your soup mixture.
Cook on a simmer for 10 more min.
Remove from heat and throw away bay leaves.
Stir in miso lemon juice, and black pepper.
Serve ‘No Chicken Noodle Soup’ in a lg soup bowl and add in cooked pasta as desired.
