PP Easy 'No Chicken Noodle Soup'

INGREDIENTS

  • 1 c carrots, chopped

  • 1 c celery, chopped

  • 1 c, red onion, diced

  • 2 garlic cloves, minced

  • 4 c vegetable broth

  • 2 bay leaves

  • 1 t dried thyme

  • 1 t dried oregano

  • 1 t dried parsley

  • 1 T lemon juice

  • 1 t miso

  • Black pepper to taste

  • 1 pkg whole wheat pasta (cooked separately)

  • 1 c soy curls shredded, or 1 c jackfruit shredded

DIRECTIONS

  1. Cook pasta according to the pkg. directions.

  2. Sauté onions, garlic, carrots, and celery in 1 c of vegetable broth in a large soup pot - bring to a simmer and cook until onions are translucent.

  3. Add in the remainder of vegetable broth, bay leaves, seasonings and bring to a simmer, or until vegetables are fork tender. (around 10-15 min)

  4. After soy curls are rehydrated and shredded OR shredded jackfruit is ready and add into your soup mixture.

  5. Cook on a simmer for 10 more min.

  6. Remove from heat and throw away bay leaves.

  7. Stir in miso lemon juice, and black pepper.

  8. Serve ‘No Chicken Noodle Soup’ in a lg soup bowl and add in cooked pasta as desired.
