PP Mia's Berry Compote

INGREDIENTS

  • 2 ripe pears, apples or nectarines, rinsed, patted dry and diced

  • 1 c (or more) of fresh berries (or thawed, if frozen) – blackberries, raspberries, blueberries or a combination

  • 1-2 T of juice from a fresh orange*

  • 1 t arrowroot (or cornstarch)

  • Dash of ground cinnamon

DIRECTIONS

  1. Dissolve the arrowroot (or cornstarch) in the juice, in the bottom of a saucepan (do this BEFORE heating the pan).

  2. Add the diced fruit and berries and then heat just until boiling, so that the mixture will thicken.

  3. Serve on top waffles, French toast or pancakes.

TIPS

  1. You can also make this recipe with water instead of juice. For a small amount of orange juice on hand anytime, buy frozen concentrate (made from oranges only – no other ingredients), with a screw-cap, and remember the 3 to 1 ratio – If you need ¼ cup of orange juice for a recipe, use 1 TBSP of frozen concentrate and 3 TBSP water. It will last for months and months in the freezer.

  2. Compote will keep in the fridge for several days or in the freezer for several months.
