PP Tzimmis with Raisins

INGREDIENTS
3 lbs sweet potatoes, peeled and large dice
4 c large diced carrots
1 T honey
2 c raisins (or other dried fruit-apricots or prunes are great, too)
3 t cinnamon
2 c orange juice
2 T fresh orange zest
DIRECTIONS
Place all ingredients into a pot, simmer until potatoes and carrots have softened, adding additional juice, if needed. Cook time is about 30 min.
Serve as a side, or combine with other dishes like lentils, cabbage slaw, or quinoa salad.
