PP Herbed Miso Soup

INGREDIENTS

  • 4 c water

  • ½ c onion, diced

  • 2 cloves garlic, minced

  • 1 T ginger, minced

  • 1 t turmeric powder

  • Black pepper, small pinch

  • 1 c mushroom, diced

  • 1 c broccoli florets

  • ¼ c miso paste

  • 4 c baby greens (arugula, water cress, baby kales, baby spinach, etc.), chopped

DIRECTIONS

  • Place all ingredients, except for the miso and greens, in a pot and bring to a simmer. Cook for about 10 minutes and remove from the heat.

  • Stir in miso paste. Place back onto very low heat, and gently simmer for about 3 minutes.

  • Stir in the greens and serve hot.
