PS Vegan Oatmeal Chocolate or Raisin & Goji Cookies

INGREDIENTS
Oatmeal with Chocolate Cookies
2 c rolled oats
2 medium bananas
½ t Himalayan salt
2/5 c additive-free peanut butter
4 pieces of dark chocolate (at least 70%) or ¼ c vegan dark chocolate chips
Raisin/Goji Berry Cookies
Same as above to peanut butter
1T raisins
1 T goji berries
DIRECTIONS
First make sure your peanut butter is at room temperature. If not measure and leave it out on the kitchen counter.
Start by pouring 2 c rolled oats into a large bowl.
Next, take a large plate, peel the bananas and mash them with a fork until they are nicely pureed.
Now mix he peanut butter and Himalayan salt with pureed bananas (using a fork). Alternatively, use a regular or immersion blender to process peeled bananas, peanut butter and salt into a smooth puree.
Transfer the wet ingredients onto rolled oats. Mix with a spatula or with your hands until everything is well incorporated.
Then, fold in the chopped dark chocolate or raisins and goji berries. Stick the batter in the refrigerator for refrigerator.
Preheat oven to 350 degrees F.
When the dough has cooled, form 8 cookies by measuring 2 T of batter for each cookie.
Then form a dough ball, press it down with your hand and shape it into a circle. Transfer the cookies onto a baking sheet lined with parchment paper.
Bake the cookies for 20 min until golden brown. Let cool.
