PP Easy Eggless Frittata

INGREDIENTS
1 ½ c chickpea flour
1 ½ c nondairy milk unsweetened/unflavored
¼ c nutritional yeast
1 t onion powder
1 t garlic powder
1 t smoked paprika
¼ t turmeric
1/8 t black pepper
2 t baking powder
1 – 1 ½ c chopped veggies (peppers, broccoli, cabbage, mushrooms, onions, potatoes)
DIRECTIONS
Preheat oven to 350 degrees F.
In a lg mixing bowl add in all the dry ingredients. Whisk in the non-dairy milk until batter becomes like pancake consistency. Fold in chopped vegetables.
In a 9” silicone round or parchment lined 9” pan – pour eggless frittata mixture into pan.
On the top of the frittata place sliced tomatoes (or mushrooms/broccoli, peppers).
Gently push the topping veggies down to stick slightly into the batter.
Bake for 30-35 min until golden.
TIP
You can broil your frittata for 1 min. (Be sure your pan can be broiled.)
