PS Brian's Sweet & Smoky All-Purpose Dressing

Makes: 1 ¼ c

Prep Time: 5 min

INGREDIENTS

  • 3 to 4 pitted Medjool dates (about 60 g)

  • ½ c water

  • ½ c lemon juice

  • 2 T tahini

  • ¼ to ½ t Liquid Smoke

  • ¼ t salt (optional)

DIRECTIONS

  1. Place all the ingredients into a high-speed blender.

  2. Blend until dates are completely incorporated, about 60 seconds.

  3. Pour into a container and store in the refrigerator for up to 1 week.

TIP

For a smaller ¼ batch, combine 1 pitted Medjool date, 2 T water, 2 T lemon juice, ½ T tahini, and 5 drops of liquid smoke into a small blender/bullet. This will not work in a larger blender because there will not be enough to blend. When making a ¼ batch, we use the 8 oz blending cups that work with our Ascent Series Vitamix. Please note that these cups only work with that blender.
