PP or PS Anytime Ranchero Tacos

INGREDIENTS

  • 1 can of no-salt added canned black beans (or pre-soak & cook your own)

  • 1 ¾ c extra firm tofu

  • 1 T cumin

  • 1 T salt-free chili powder

  • 1/3c + 2 T nutritional yeast

  • No oil added corn tortillas

  • 1 c + 2T low sodium salsa

    Optional

  • 1 avocado (eliminate if PP)

  • ¾ c cilantro

  • Salt & pepper – to taste

  • Low of no sodium hot sauce

DIRECTIONS

  1. Produce Prep : Rinse the cilantro (if using) and roughly chop; set aside. Rinse and dice the green onions. Remove the skin and pit from the avocado (if using) and cut into small pieces.

  2. Rinse and drain the canned black beans. Drain excess moisture from the extra firm tofu by pressing it between your hands.

  3. Bring a non-stick sauce pan up to medium-high heat. Crumble the extra firm tofu into the pan. Stir in the cumin, chili powder and some salt and pepper. Mix the spices in with the extra firm tofu. Then, stir in the green onion and stir-fry the mixture for about 5-10 minutes, or until the tofu has started to brown.

  4. Stir in the beans and continue cooking until the mixture is warm throughout. Then, remove from heat and stir in the nutritional yeast, and salt and pepper to taste.

  5. To plate, lay the corn tortillas on a plate and top with the extra firm tofu mixture. Top with salsa, avocado (eliminate for PP), cilantro (if using) and hot sauce.

  6. Eat it while it’s hot!
