PP or PS Mushroom Tofu with Turmeric Fried Rice

INGREDIENTS

  • 1 King (Oyster) mushroom shredded, or lg Portabella mushroom

  • 1 c extra firm tofu, diced

  • 1 c frozen mixed vegetables

  • ¼ t turmeric powder

  • 1 T low sodium soy sauce

  • 2 c cooked brown rice

Garnishes

  • Pine nuts (PS only)

  • Sunflower seeds (PS only)

  • Fresh coriander

DIRECTIONS

  1. Rinse mushroom, clean and shred.

  2. Dice tofu. Combine mushroom shreds, diced tofu and mixed vegetables to a pan and cook for 3 min.

  3. Add turmeric powder, low-sodium soy sauce, salt and pepper to taste. Mix well.

  4. Add cooked brown rice and mix well. Cook for 2 min.

  5. Garnish as desired.

  6. Enjoy!
