PS Quinoa Chipotle Bowl With Southwest Tahini Sauce

INGREDIENTS

Quinoa Chipotle Bowl

  • 1 c cooked quinoa

  • ½ c sweet or roasted corn into hot skillet and cooked it until it basically started to burn)

  • ½ c fat-free refried beans

  • ½ c low-sodium or no-salt added black beans (drained and rinsed)

  • ½ c shredded Romaine lettuce

  • ½ c shredded red cabbage

  • ¼ c guacamole (I LOVE Wholly Guacamole)

  • ¼ c salsa

  • ¼ c chopped green onions

Southwest Tahini Sauce

  • ¼ c tahini

  • ¼ c water

  • 2t apple cider vinegar (or you can use lemon juice if you prefer)

  • 1 t chili powder

  • ½ t onion powder

  • ½ t garlic powder

  • Salt to taste

DIRECTIONS

Quinoa Chipotle Bowl

  1. Cook the quinoa according to package directions.

  2. Place corn in a hot skillet and cook until it starts to burn. Set aside.

  3. Drain and rinse beans. Set aside.

  4. Shred your Romaine lettuce and cabbage, set aside.

  5. Chop your green onions and set aside.

  6. Place all ingredients from the Quinoa Chipotle Bowl section into a bowl, assembling or layering however you choose.

Southwest Tahini Sauce

  1. Combine all ingredients into a small mixing bowl or dish.

  2. Whisk until smooth and creamy. Add water for a thinner consistency, but I like mine on the thicker side.
